The term “bourbon” does not refer to the alcohol from Kentucky, but the variety of vanilla bean pod.  When commercial production of vanilla began in the 1800’s on the islands east of Madagascar, those islands were controlled by the Bourbons of France.  Hence the name “Bourbon Vanilla”.
