Strawberry Bread with Vanilla Glaze

Bright, sweet, and delicious. This strawberry bread with vanilla glaze is full of delicious, ripe strawberries and topped with a creamy vanilla glaze. This bread will be a hit at your summer barbeques, but the bright red bursts of color make it a great Valentine’s Day recipe, too.

So you got a little overzealous with your strawberry picking, don’t worry; it happens to the best of us. The only problem now is that you have more strawberries that you know what to do with. Lucky for you, this recipe is the perfect way to enjoy those fresh strawberries in a delicious dessert.

Strawberry Bread Ingredients 

• Eggs
• Plain yogurt
• Vegetable oil
• Vanilla: Always bake with vanillatude
• Whole wheat flour
• sugar
• baking soda
• baking powder
• salt
• fresh, diced strawberries: Use fresh, ripe strawberries. Cut your strawberries into small cubes, and then toss in flour. This will help the strawberries not stick to the bottom of the bread.

Vanilla Glaze Ingredients 

• confectioners sugar
• vanilla 
• heavy cream

How to Make Strawberry Bread with Vanilla Glaze 

1. Preheat the oven to 350°F, and grease an 8”x 4″ loaf pan.
2. Whisk together the flour, sugar, baking soda, salt, and baking powder in a large bowl.
3. In a separate bowl, beat the eggs until evenly yellow (but not frothy). Stir in the yogurt, oil, and vanilla. Stir until evenly mixed.
4. Pour the wet mixture into the dry mixture and mix until there are no more flour traces.
5. Gently fold in the strawberries, then pour the batter into the loaf pan.
6. Bake for about 40 minutes or until a toothpick in the center comes out clean.
7. Let the bread cool in the pan for 10 minutes.
8. While the bread is baking/cooling, make your vanilla glaze by mixing all the ingredients and whisking until combined and creamy.
9. Remove the bread from the pan and let it cool a little longer.
10. Pour the glaze over the top, and slice the strawberry bread into slices. Serve and enjoy!
