Vanilla Facts

Vanilla is a tropical orchid it bears the only edible fruit of the orchid family, the largest family of flowering plants in the world. Although there are about 150 varieties of vanilla, only two species produce commercially viable vanilla beans: Planifolia (Bourbon) and Tahitian.

Vanilla grows within the 20-degree band either side of the Equator and is native to the Americas. It is the world's most labor-intensive agricultural crop, which is why it's so expensive. It will take up to three years after the vines are planted before the first flowers appear. The flowers must be hand-pollinated within a few hours of blooming in order for the plant to bear fruit. The fruits, which resemble big green beans, must remain on the vine for nine months before they are ripe enough to pick. When the beans are harvested, they have neither flavor nor fragrance. The distinctive vanilla aroma that is familiar to all only develops when the beans are cured. This process can take several more months.
