Vanilla Buttermilk Pancakes

Ingredients
2 1/2 cups unbleached flour
2 1/2 teaspoons sugar
2 Tablespoons baking powder
1 teaspoon salt
2 1/2 cups buttermilk
2 large eggs - beaten
2 Tablespoons pure vanilla extract
1 Tablespoon melted butter
1 teaspoon baking soda

In a large bowl, sift flour with sugar, baking powder and salt.

In a small mixing bowl, mix the buttermilk with the eggs, vanilla, butter and baking soda.

Cobine wet and dry ingredients and mix until smooth. Allow batter to set for ten minutes before making pancakes.

Heat a frying pan or griddle to medium-high heat and spray with a light coating of cooking spray. Ladle about a 1/4 cup of batter into the pan to make each pancake. Cook until golden brown on both sides.

For extra vanilla flavor add a few teaspoons of vanilla extract to your maple syrup (2 -3 teaspoons per cup of syrup).

Makes about 16 8-inch pancakes.
