Vanilla Sugar

Vanilla sugar is simple to make and is a great way to use the vanilla pod that remains after scraping out the vanilla seeds which are used in many recipes. You can use a fancy jar to make a wonderful gift.

1 Vanilla Bean, scraped
2 - 3 cups granulated sugar

If you are using a fresh vanilla bean, you can either scrape out the seeds for use in another recipe or add the entire bean for longer lasting, more intense flavor.
If you are using the scraped pod from a recipe in which it was cooked in a liquid (such as milk) then rinse the pod with water and allow to dry.

Place the sugar and the vanilla pod in an airtight container so that the pod is buried in the sugar. Allow to sit for several weeks. The pod with infuse the sugar with a subtle vanilla flavor.

You can continue to add new sugar to the container until the vanilla is no longer fragrant (typically for 6 months to one year depending on your usage). When the pod is no longer fragrant use if to make Real Vanilla Coffee.
